The recipe is easy, but fussy. I've listed it below.

1 cup icing sugar*
1/2 cup smooth peanut butter
3 tbsp softened butter
3/4 cup graham cracker crumbs
8 x 28g white chocolate squares**
whole peanuts
food dye
oil, as needed***
Beat the sugar and peanut butter until smooth. Add the graham cracker crumbs and beat until combined.
Take about a teaspoon of mixture and roll it into a small, football-shaped body. Place on a cookie sheet. Repeat for the rest of the mixture. Refrigerate for about 30 min.
Melt the chocolate in a small saucepan set over another small saucepan of hot (not boiling) water, stirring until smooth.
Using forks, dip the body in the chocolate and let the excess drip off. Set the body on a wax paper-lined tray. Repeat.
While the chocolate is still soft, add 2 peanut halves for ears.
If you're feeling adventurous or have good dexterity, coconut shreds can be tucked into the bums for tails and round sprinkle decorations can be used for eyes.
Once all the bodies have chocolate and ears, put them back in the fridge for about 30 min.
I'm not dexterous enough to use sprinkles for eyes, instead, I use icing sugar mix: using a bit of icing sugar, water, and food dye, mix up some pink for noses and blue or green for eyes (can use milk or dark chocolate for brown eyes). Amount of water to icing sugar is up to you, just make it runny enough to squeeze out of the bag but firm enough to hold the little ball shape. Put the mixture in a sandwich bag and cut a tiny corner off to make a piping bag. Pipe on the eyes and noses. Refrigerate again.
Cut away any pooling of chocolate near the bodies' bases to make them look a bit more mouse-shaped.
These are best cold, but can be left out on the counter if it's not too hot out.
*peanut butter has changed since the recipe was created. More icing sugar may be needed to hold the mouse shapes while it's dipped in chocolate. To test, roll a ball of dough. If it's too sticky, beat in more icing sugar. They should be firm.
**chocolate gets messy and you'll likely use more than you think. I've found it better to double the amount required.
***sometimes melting chocolate thickens up. Add a tiny bit of oil to keep it smooth.
